Q: Young nut or mature nut — which am I buying?

Ask, because many offers are silent on it. Young nuts run 5.0–6.5 Brix with around 220 mg/100 mL potassium; mature nuts run 3.6–4.9 Brix with around 350 mg. Same HS code, visibly different drink.

Q: Why does pH matter so much here?

Because above pH 4.6 the product is low-acid, and low-acid shelf-stable beverages carry the botulinum control burden. That is why genuine UHT at 137–145 °C plus aseptic filling is not optional, and why a pasteurised chilled product is a one-week product, not a shipping product.

Q: Do you offer HPP coconut water in bulk?

No. HPP is a finished-goods process with roughly 45 days of life and no 12-log spore kill — it is not a bulk export format. It also does not inactivate polyphenol oxidase, so pinking risk stays live; UHT does inactivate it.

Q: Can we label the finished drink "100% coconut water"?

If you bottle our NFC single strength without dilution or additives, yes. If you buy concentrate and reconstitute, US law makes "from concentrate" a mandatory part of the name under 21 CFR 102.33 — that is a labelling decision to take before you choose the format.

Low-acid, and everything follows from that.

At pH above 4.6 this is a low-acid product, more microbiologically fragile than almost any fruit juice. It needs genuine UHT plus aseptic filling, and for the US a validated 5-log Clostridium botulinum control under 21 CFR 120.
